500 G Asparagus, white
0.5 TL sugar
0.5 TL salt
1 Pcs Lemon the peel of it
30th G butter

Preparation

  1. Peel the white asparagus and remove the woody end and place it in the vacuum bag.
  2. Grate the peel of the untreated organic lemon with a grater and add it to the bag along with the butter, sugar, and salt.
  3. Now remove the air from the bag using a vacuum device and seal the bag.
  4. The sealed bag is then placed in the steam cooker or in a sous vide device for approx. 30 minutes at 85 degrees.
  5. Take the finished asparagus out of the bag and serve with boiled potatoes and a hollandaise sauce.
