- Peel the asparagus, cut off the woody ends. Bring plenty of salted water to the boil, add the sugar and 1 tablespoon of butter and cook the asparagus bite-proof in about 15 minutes. Then remove, drain, and keep warm.

Pour in the cream and let everything simmer until a creamy sauce has formed. Season with salt, pepper, and cayenne pepper and keep warm.
- Rinse the chives, shake dry, cut into rolls and stir into the sauce.
- Bring the remaining white wine to the boil with 1/4 liter of water. Salt, pepper and let the salmon soak in the brew in about 8 minutes over low heat.
