Baked Salmon with Asparagus Sour Cream Recipe

  1. Peel the asparagus, cut off the woody ends. Bring plenty of salted water to the boil, add the sugar and 1 tablespoon of butter and cook the asparagus bite-proof in about 15 minutes. Then remove, drain, and keep warm.
  2. In the meantime, peel and finely chop the shallots. Heat the butter in the pan. Fry the shallots in it until soft. Deglaze with 1/8 l of white wine and let it boil down almost completely. Pour in the cream and let everything simmer until a creamy sauce has formed. Season with salt, pepper, and cayenne pepper and keep warm.
  3. Rinse the chives, shake dry, cut into rolls and stir into the sauce.
  4. Bring the remaining white wine to the boil with 1/4 liter of water. Salt, pepper and let the salmon soak in the brew in about 8 minutes over low heat.
