Preparation Tagliatelle with Fresh Spinach and Salmon
- Cook the noodles according to the instructions for use - attention, fresh noodles only need 2 - 3 minutes (so pay attention to timing)!
- Free the spinach from stems (up to the beginning of the leaf) and wash thoroughly. The best way to get out sand is to put the spinach in water and not just blow it off.
- Cut the onion into rings, put them in a pan with a high rim and lid with the oil and sauté them until they are low to medium heat (don't fry!). Mix vegetable broth with water and pour in (alternatively, white wine instead of broth is also possible). Peel the garlic, cut it into small pieces, and put it in the pan. Now add the spinach. Possibly. it only works little by little, but it quickly collapses so that you can add more if the pan is not big enough. Cut the smoked salmon into pieces and add as soon as the spinach has completely collapsed. As an alternative to smoked salmon, there is also fresh salmon, which can be simply diced in the same way and added raw.
- Remove some liquid and mix with the starch in a cup until it dissolves. Pour this mixture back into the pan, as well as the cup of cream or sour cream.
- Season with pepper, salt, and (preferably freshly grated) nutmeg, drain the pasta and mix in and serve.
